Ingredients:
3 pears
4 eggs
3/4 cups of sugar
1 stick of melted butter (unsalted)
2 teaspoons of vanilla extract
2 cups of flour
A pinch of salt
1 teaspoon of baking soda
2 teaspoons of cinnamon or 1 teaspoon of all spice
1 tablespoon of sugar for topping
Heat oven at 350 degrees
In a bowl, mix all the wet ingredients together; start by beating the eggs with sugar and then add the vanilla extract and mix and then slowly add the melted butter (butter needs to be room temperature) and mix gently.
In another bowl add flour, baking soda, pinch of salt, and spices (cinnamon or all spice) and stir and set aside.
Slowly add the dry ingredients to the wet ingredients, and mix slowly to avoid lumps. Don't over mix, gradually add the dry ingredients in 3 times. Once obtained a smooth mixture set aside.
Peel and slice the pears and add them to the mixture. With the help of a spoon, stir the pears into the mixture from bottom to up.
Place cake batter into a 9" round pan and sprinkle the top 1 tablespoon of sugar and place in the oven and bake for 45/50 minutes.
