How to Make Coffee with Foam 

I used to enjoy watching my mom make espresso with foam. It is so simple to add a unique touch to your cup of espresso and this is how you do it:
Prepare your espresso with the moka pot, and place on the stove, on low heat;
Meanwhile, prepare a bowl with high sides with a heaping tablespoon of white sugar.
As soon as the coffee is starting to come out you must immediately, remove the coffee maker from the heat and pour very quickly the first few drops of liquid into sugar.
 (for perfect results it's important you pour the first drops of coffee into the sugar).
Place the coffee maker on the stove to allow the coffee to get out completely.
Using a spoon, vigorously mix the sugar with the first drops of coffee, until it forms a thick, light cream.
Take a teaspoon of cream sugar and pour it into a cup. Pour in the hot coffee into a cup with sugar and cream mix: on the surface it can be seen the formation of thick cream.


The cream sugar and remaining coffee can be stored in the refrigerator, covered with plastic wrap, for 2-3 days.
